5-HMF (5-hydroxymethyl-furfural) is a product of thermal treatment and is increasingly considered a food contaminant. Here, different concentrations of 5-HMF were measured in apple juice to evaluate the performance of the electronic nose (EN) and electronic tongue (ET) as rapid detection techniques for 5-HMF when coupled with chemometric analysis. Principal component analysis (PCA) and linear discriminant analysis (LDA) evaluated the discrimination capacity of EN and ET for 5-HMF. Loading analysis examined the discrimination contribution of the EN sensors. Partial least square (PLS) regression analysis established a quantitative prediction model for different concentrations of 5-HMF based on EN and ET data set. The optimal models had a coefficient of determination (R2) of 0.926 and a root-mean-square error of prediction (RMSEP) of 0.4168 in EN; there were R2 of 0.914 and RMSEP of 0.5836 in ET. These results demonstrate that EN and ET coupled with chemometric analysis are two promising approaches for the rapid and online detection of 5-HMF in apple juice. 相似文献

A colorimetric assay based on the oriented TA-AuNPs-PEG-FITC for rapid and sensitive PABA detection was proposed. Initially, the negatively charged TA modified on the surface of AuNPs enabled rapid binding to PABA due to the electrostatic interaction and hydrogen bond, resulting in a visible color change. However, particles were aggregated in a non-oriented way, leading to an unstable testing system which failed to realize the accurate quantification. Thus, the asymmetrically functionalized TA-AuNPs-PEG-FITC were prepared, in which the stabilizer agent of HS-PEG-FITC was attached to the specific sites on the surface of TA-AuNPs. Such a way of modification resulted in an oriented aggregation manner, the addition of PABA induced the formation of oligomers. Moreover, the introduction of FITC group acted as fluorescent marker, providing a simple, fast and quantitative method for characterization of PEG chain. The molar ratio between TA-AuNPs and modified PEG-FITC was further determined. A linear regression was established in a wide range from 10 μM to 1 mM with the LOD of 6.9 μM. Finally, the sensor was successfully applied in the health food. This was the first example in which TA-AuNPs-PEG-FITC were fabricated for colorimetric detection of PABA, and an indirect method based on fluorescence marker was well used to quantify the content of PEG chain. 相似文献

Fresh fruits and vegetables are highly perishable and are subject to large postharvest losses due to physiological (senescence), pathologic (decay), and physical (mechanical damage) factors. In addition, contamination of fresh produce with foodborne human pathogens has become a concern. Gaseous ozone has multiple benefits including destruction of ethylene, inactivation of foodborne and spoilage microorganisms, and degradation of chemical residues. This article reviews the beneficial effects of gaseous ozone, its influence on quality and biochemical changes, foodborne human pathogens, and spoilage microorganisms, and discusses research needs with an emphasis on fruits. Ozone may induce synthesis of a number of antioxidants and bioactive compounds by activating secondary metabolisms involving a wide range of enzymes. Disparities exist in the literature regarding the impact of gaseous ozone on quality and physiological processes of fresh produce, such as weight loss, ascorbic acid, and fruit ripening. The disparities are complicated by incomplete reporting of the necessary information, such as relative humidity and temperatures at which ozone measurement and treatment were performed, which is needed for accurate comparison of results among studies. In order to fully realize the benefits of gaseous ozone, research is needed to evaluate the molecular mechanisms of gaseous ozone in inhibiting ripening, influence of relative humidity on the antimicrobial efficacy, interaction between ozone and the cuticle of fresh produce, ozone signaling pathways in the cells and tissues, and so forth. Possible adverse effects of gaseous ozone on quality of fresh produce also need to be carefully evaluated for the purpose of enhancing microbial and chemical safety of fresh produce. 相似文献

Herein, the assessment of commercial beef and chicken bouillons in terms of heterocyclic aromatic amines (HAAs) and some of their precursors was evaluated. Creatine and creatinine levels were ranged between 0.57–0.80 and 0.28–0.94 mg g−1, respectively. Glutamic acid was found to be the most abundant amino acid in both bouillons. 2-amino-3,7,8-trimethylimidazo[4,5-ƒ]quinoxaline (7,8-DiMeIQx, up to 0.03 ng g−1) was the only quantified analyte in beef bouillons, whereas it (up to 0.08 ng g−1) was determined in addition to 2-amino-3-methylimidazo[4,5-ƒ]quinoxaline (IQx, up to 0.08 ng g−1) in chicken bouillons. Creatine, creatinine and free amino acid composition did not have the capacity to initiate the formation of HAAs. Therefore, bouillons do not pose risk in terms of HAAs. However, it should be noted that multiple factors, such as the substrate amount and production conditions, may affect the results. 基于柠檬酸-铕金属有机纳米配体聚合物(citrate/europium lanthanide coordination polymer nanoparticles,Cit/Eu LCP NPs)构建快速检测肉品汤煲中5’-肌苷酸(inosine-5’-monophosphate,5’-IMP)的荧光探针。研究结果表明,5’-IMP对Cit/Eu?LCP?NPs有良好的荧光猝灭作用。在最佳条件下,该荧光探针在5’-IMP?2.5~200?μg/mL的质量浓度范围内呈现出良好的线性关系,检出限为0.17?μg/mL,且具备良好的抗干扰、稳定性和重复性。为了验证方法可行性,将该方法应用于实际鸡汤样品中的5’-IMP检测,测得加标回收率为97.85%~103.95%,可为快速检测肉品汤煲中5’-IMP提供新的思路和方法。 相似文献

In this study, the accumulation of GABA and its inherent factors across different varieties of mung bean (Vigna radiata L.) in response to heat and relative humidity (HRH) were investigated. Results showed the average GABA content in mung bean varieties was increased 7.52 times following HRH treatment, and the black mung bean variety (A8) exhibited the highest GABA accumulation capability (1.76–84.57 mg per 100 g DW). From the perspective of GABA shunt metabolites, the free glutamic acid content of mung beans significantly decreased (P < 0.05) after HRH treatment and presented a significant correlation (P < 0.05) with GABA content. In polyamine degradation pathway, although the average levels of spermine and spermidine of mung bean varieties significantly decreased (P < 0.05) after HRH treatment, no significant correlation with GABA content was identified. Hence, the GABA accumulation was predominantly attributed to GABA shunt. Besides, free amino acids including glutamic acid, serine, ornithine, arginine and glycine in mung beans showed a significant positive correlation (P < 0.05) with GABA content and increment following HRH treatment, which suggested that mung beans enriched in these free amino acids might accumulate higher amounts of GABA after HRH treatment and be useful for industrial applications. 相似文献

To overcome the scarcity and costliness of noble metal dopants, carbon (C) doping, as a low-cost alternative, was achieved by absorbent cotton when the alpha (α)-Fe2O3 microtubules were synthesized with a facile hydrothermal method and necessary calcination. The absorbent cotton not only provided carbon source but controlled the microtubular morphology of α-Fe2O3. Meanwhile, for comparison, a pure α-Fe2O3 nanoparticles sample was also prepared without using absorbent cotton. Numerous techniques were employed to characterize the element composition and microstructures. The consequences demonstrated that carbon had been successfully incorporated into the porous hollow α-Fe2O3 microtubules composed of many nanoparticles. Compared with the α-Fe2O3 nanoparticles, the carbon-doped α-Fe2O3 microtubules possessed the unique morphology, large specific surface area and pore size, and abundant oxygen vacancies (OV). To reveal the function of the carbon-doped α-Fe2O3 microtubules and α-Fe2O3 nanoparticles, two chemical gas sensors were manufactured and researched systematically. Forasmuch as those advantages mentioned above, the sensor based on the carbon-doped α-Fe2O3 microtubules exhibited better gas sensing properties to acetic acid vapor at a lower optimal operating temperature of 260 °C, such as higher response value, shorter response and recovery time, good repeatability, and stability. And thence the carbon-doped α-Fe2O3 microtubules product could be considered as an excellent acetic acid vapor sensor in the future. In addition, the possible grown mechanism and gas sensing mechanism of the carbon-doped α-Fe2O3 microtubules were discussed in detail. Epoxidized methyl esters (EMO) with their high oxirane ring reactivity, acts as a raw material in the synthesis of various industrial chemicals including polymers, stabilizers, plasticizers, glycols, polyols, carbonyl compounds, biolubricants etc. EMO has been generally quantified by the gas chromatography (GC) and high-performance liquid chromatography (HPLC) techniques. Taking into the account of the limitations of these techniques, two qHNMR-based equations have been proposed for the quantification of EMO in the mixture of EMO and methylesters (MO). The validity of the proposed method was determined using standard mixtures of MO and EMO having different molar concentrations. The developed equations have been applied on the samples of EMO prepared from oleic acid in two-step process viz., esterification followed by epoxidation. The qHNMR-based EMO quantification showed acceptable agreement with the results obtained from HPLC analysis. 相似文献
